We can take it out as soon as it's done cooking, or let it rest in the water until we’re ready to eat without constantly checking the oven. For instance, let’s say you’re braising a steak, you’d probably know precisely the texture and color of when it gets done, right? If so, you shouldn’t hesitate to try the sous vide cooking method, because this is where it works best!
